Wonderful post.

When we did burns night (always amazed how many wannabe scots there are out there) i served little haggis souffles as an accompaniement. Yes we did the whole ” as a tribute” but we need to get a bit more sexy with it now days and i think you managed that very very well.

Mei, all of the above, plus a little scared maybe?

Afraid we didn’t get around to the scotch eggs last night, will have to try those later this week. We did poach some quails eggs and put them on top though. Haggis & egg is good together, especially the runny yolk bit.

Lizzie, the best way was number 1) I think. Makes sense, as that’s pretty much what is done to a normal haggis. And the Scottish obviously know best.
